I also had stir fry...w/ Southbeach teriyaki sauce used and some caramelized onions and water chestnuts added. :)

Tonight I made chicken sauteed in olive oil w/ garlic, Mrs. Dash, garlic powder, onion powder, salt, pepper, and lemon pepper. For a side I carmelized some onions and then sauteed some zucchini w/ them and seasoned it all w/ garlic powder, pepper, and salt. Oh, and I had asparagus, too...and a caesar salad w/ low-fat 5-blend Italian cheeses and sugar-free fat-free caesar dressing. YUMMY.

It actually has been w/ the exception of 1 meal (it was a recipe from the South Beach cookbook). I've always been a fan of salad, so that part is easy for me...it's finding the no carb, no sugar dressings that makes it difficult. Cardini's Original Caesar dressing is South Beach approved and it's actually good, too. ;) And since I love vegetables, it's not too hard to stick to the diet and eat healthy.

I will say, though, that I do miss my potatoes a little bit...and my carrots A LOT.

oh yeah I would miss all of that! I am a starch FREAK!
Part of the basis of the diet is that starchy foods create a craving for more starchy foods...so you eliminate those and you eliminate the cravings. So far it seems to be dead on.

I have no doubt of that...it's like crack cocaine!!!

I've been trying - really I have. I haven't eaten rice or pasta in DAYS! I haven't had a white potato in about a month. But I've had bread non stop.


I could use the excuse of being a vegetarian, but that's kind of a cop out. I may not be able to eat chicken, etc. but I could eat eggs and beans and nuts to fill me up.

That being said, I think I may go get some Cheese Quasadilla's from Taco Bell.

I've got a recipe from Food Network for Confetti Chickpeas that looks really good...I'm going to try it sometime next week, maybe, and I'll let you know how it turns out. If you like chickpeas it might be a good option for you. ;)

I made veggie soup which was bland as shit. But I ate it.

Here's the recipe. It was served on the show as a side to seared salmon, but I don't like fish so I removed that part of the recipe. I haven't tried it yet, but it sounds really good and looked really good.
Ingredients


  • 2 tablespoons extra-virgin olive oil
  • 1 cup diced onion
  • 1/2 teaspoon dried red pepper flakes
  • 1 small red bell pepper, diced (about 1 cup)
  • 2 medium carrots, diced (about 1 cup)
  • 1/2 pound yellow zucchini, diced
  • 1/2 pound green zucchini, diced
  • 2 (15 1/2-ounce) cans chickpeas
  • 2 cups reduced-sodium chicken broth
  • 1/2 cup dry white wine
  • 1 1/2 teaspoons kosher salt, plus more for seasoning
  • 2 sprigs rosemary, plus 6 sprigs for garnish
  • 1 bay leaf
  • Freshly ground black pepper
Directions

Heat the olive oil in a large pan over medium heat. Add the onion and saute until translucent, about 5 minutes. Add the red pepper flakes and cook 1 more minute. Add the bell pepper, carrots, yellow zucchini, and green zucchini and cook until just beginning to brown, about 5 minutes. Add the chickpeas, broth, white wine, 1 1/2 teaspoons salt, 2 rosemary springs, and bay leaf and simmer for 15 minutes. Remove the rosemary sprigs and bay leaf.


To serve, use a slotted spoon to scoop the chickpea mixture onto a serving dish.
