I got TONS of easy recipes for you!!! When i get the chance, i can PM you some!! In the mean time...here's one REALLY easy (and cheap)...

(PS-not for someone watching their weight/calories/carbs)

Shrimp Scampi Pasta
(everything is singled but when i cook it, i double the recipe with keeping the same amount of shrimp and noodles)

1lb shrimp peeled and deveined
12 oz linguine noodles
3 tablespoons butter
2 1/2 tablespoons olive oil
4 cloves garlic, minced
lemon juice
seasonings (salt, pepper, tony's, cayenne (sp))

Take cleaned shrimp, and season (remember little cayenne goes a long way) set aside. Boil water in large pot. In a skillet, melt the butter and olive oil over medium-low heat then add garlic and saute

*do this about the same time the water starts to boil that way the noodles are done when the shrimp are

When water is boiling, add noodles (takes about 15 minutes to cook)

After adding noodles to water, add your seasoned shrimp to the butter and garlic saute in the skillet. Shrimp cook quite fast so keep and eye out and stir often.

Once noodles are done, drain and add back to pot. Mix in the buttered shrimp and mix well. Dash in a few 'chugs' of lemon juice and mix. ENJOY!!
