Wife cooked down the one I grabbed for lunch the other day. She made a chicken soup/stew with lots of our veggies in it. What is left will be turned into potpies tomorrow.

Mmmm, I haven't had a chicken pot pie in FOREVER. I have been craving one, no lie, for like a year now. :24:

That is the only way I can eat them anymore. Used to love the Marie Callender ones. Then I looked at the label one day. 45% sodium! That was the last ones I ate. She makes them even better and they are actually good for me.

Got a recipe you can share???

She cooks and picks down the chicken and then adds carrots and celery along with potatoes and corn to the broth and simmers it uncovered for about 2 hours. Then she adds in a container of swanson chicken broth and cooks covered for another hour. As far as the meat pies she just sprays cooking oil on the pan and lines them with pie dough. Stuff it full and put a top cover of pie dough. Then we place them on a cookie sheet and flash freeze them overnight. Tomorrow we will bag and vacuum seal each one individually. They stay nice and will keep for many months. When I cleaned out the one freezer there were 2 behind the tomatoes we bagged and froze this summer so I ate them right up.:tooth

Awesome. I suck at making pie crust, but I could probably manage to do a whole wheat one so that it's Southbeach friendly. :)

This time of years we buy the pie crusts in the refrigerated section at Sams! I just picked up 2 more boxes the other day. They are 8 in a box and it took 3 crusts for 5 meat pies.

I wish I could, but I have to do whole wheat and no sugar added for Southbeach.

Baked herb-crusted pork loin, green beans, and mashed potatoes. I have GOT to eat back on plan soon!!!

Fridge cleaner yesterday...there was left over pizza, salmon and salad. We just picked at that, not sure what tonight will be.
