I've made these twice now and they are frigging amazing!!!

"Potatoes are baked and then hollowed out. The flesh is combined with sour cream, milk, butter, green onions and Cheddar cheese, then topped with more cheese, green onions and bacon."

[FONT=Arial,Helvetica,sans-serif]Ingredients:[/FONT]
4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided

1. Preheat oven to 350 degrees F (175 degrees C).
2. Bake potatoes in preheated oven for 1 hour.
3. Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
4. When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon. (I actually use most of the bacon, cheese, and onions in the mixture and just top w/ a little bit that I have left over.)
5. Bake for another 15 minutes.

I have been racking my brain of things to fix my mom and dad for their anniversary and this will be one of the side dishes. Thanks Tosha! :)

im not a big spud person, unless its whipped til theres no lumps or it comes in the form of french fries.

Has anybody else tried making these??? I make them pretty regularly now...usually w/ steak.

I don't like once baked potato.... I surely wouldn't like twice. Even with the pile high condiments.

My local Winn Dixie decided to put steaks on sale! WooHoo!!!!! When I saw that I went back and got some baking taters and we're having these tonight! Yum Yum Yum

Natasha, that recipe kicks butt!!! I did add a bit of mozzarella cheese into the mix also (cuz we like it too). Thanks again for posting it. Here's my plate.... I only ate half my steak, but I ate the whole tater :D
