Apple Pie Filling

8 cups Granny Smith apples, sliced (depends on the size of the apples but I find I usually use 6-7. You can make the pieces as big or small as you like. I like them small. :D)
1 cup sugar
4 tsp tapioca
1/2 cup water

Combine apples and sugar in a large pot. Let stand for 10 minutes. Then heat to boiling and cook for a few minutes. Dissolve tapioca in the 1/2 cup water. Add to hot apple mixture and boil for a few more minutes. Put in an unbaked pie shell and top with more pie pastry. Brush with a little milk. Bake at 375F for 35 to 40 minutes or until crust is golden brown.




You can probably get two 9 inch pies out of this. I have a big pie plate I like to use (I think it's actually for quiche) and this amount is perfect for one pie of that size. If you wanted, you could also make a bunch of individual-sized ones as well. :D
