The head chef at one of the resorts I worked at was Swiss, and he wouldnt answer you unless you called him "Chef".

So, us waitresses decided we wouldnt answer him unless he used our real names every time he spoke

Geez he was a turd.

That's far too common. Even more so with Eurpoean chefs. Arrogant cocks, the lot of them.

In the US they're mostly just drunks or coke-heads.

He breaks my heart, really. He's a fucking amazing chef with the creditials to back it up, and started on BBC as a helpful and constructive TV chef. But in the US he's allowed himself to become a cartoon character and his shows are no more real than Jerry Springer. It's disgusting.

He's like that over here too now. He has a gimmick - I hate Jamie Oliver and every other celebrity chef and say fuck a lot, gets really boring, he's managed to piss the Aussies off big time through his arrogance over there too. Cheating on his wife hasn't helped much also. Just wish he'd shut up and just get on with what he's good at.
He's probably a nice guy in private, he runs the London Marathon every year raising a lot of money for charity.

One is the biggest wanker you've ever come across. The other two are great.

I have my own theory about the majority of chefs, and why they're arrogant pricks.

Men are conditioned that cooking and the kitchen is REALLY a womens job.

(the old barefoot and pregnant in the kitchen)

so....being a chef is actually a womans job.

To cover up the "Stigma" of doing what is traditionally a womans role...they have to act all tough and busy and under pressure...because women can cook AND do other things at the same time.

Every chef I have known belittles the waitresses, but its all "buddy buddy pal" with the waiters.:nod:

(I told one my theory once...he wasnt impressed at all)

I can see where you may have come by that theory. I disagree with it, though, because I would argue cooking is not historically only a woman's job. From the days of Escoffier 150 years ago and long before that in the beginning of French brigade cooking - men have dominated the professional kitchen.

I think the arrogance comes from two areas - the huge ego needed to work in what is essentially a form of being a professional artist, and from the high stress level of the kitchen. It's the adreneline more than the testosterone that is the problem.

Yeah, but it is never a problem when I work with female chefs........no egos involved there.

I'd say it's the culture of the restaurant. I've worked in places where there was a lot of anomosity between FOH and BOH. Where I am now is completely different - very integrated and mutually respectful. Once in a blue moon someone has been hired who has the us vs them mentality - we get rid of them very quickly.

But as far as arrogance level and temper - every single female chef I've know is on par with the men. And we have a female sous who can be a tiger. She certainly has as many tiffs with the female employees as men.

Thats good to hear, and yes.....every kitchen is different

The local fishing club has an atmosphere totally different than the 5 star resort,

(although the clubs food is MUCH better) go figure

I'm with RR. Calamari - although I knew what it was before I had it. I was encouraged to try some but to be honest it wasn't that tasty at all although it could have been the place we ate at.

i LOVE all seafood. Living on the coast helps. Nothing beats fresh seafood

I visited some friends that live on the coast and this one time the chap brought home a bag of fresh pawns. They were massive! Couple of days later got them out and had them with a dip. Amaaazzzing.

I tried calamari once. I even knew it was calamari, but I was too young to know what it was. My dad told me mid-bite and I went to spit it out. Squid?!? YUCK!

I think that people who try to get others to eat something by misleading them or out and out lying are bothersome daft twats who need their priorities reorganized with a good swift kick in the arse!

I've had others tell me venison was beef in their 'pass a dish'. I can tell when one is being deceptive. I just watch their eyes. Once I know who these jackasses are.... I never trust them again. Never!

So.... Unless I actually made a dish with meat in it myself at a party.... I stick with the veggies and non-meat pasta dishes. :D

I actually came in here to post calamari, never been impressed with it.

Of course it doesn't help I used to have to prep 20-60lbs of it a day...

I was 'treated' to some oysters today, and once again I wasn't impressed. In fact, I made up my mind today that I will never again eat oysters in my life.

I've never liked caviar either. Yuk!

I think maybe you don't like anything raw and slimey. both caviar and oysters are eaten raw. Some sushi has good texture but some sushi you probably couldn't handle.

That's too bad. I think you got introduced to some bad stuff or you just don't like them sam I am. :( oh well. Hey wanna have some dog? they are tastier than cats
