At work we're updating our system so my entire day right now is spent phoning people to get their details, and then emailing them a brochure to their updated address. I always put 'Dear FirstName' at the start, unless they didn't supply a contact name and then I just put 'Dear Sir/Madam'.

....if you dont know gender either, "To whom it may concern" and finish with Kind Regards.

I do this with letters too, not just e-mails.
 
I wonder is it to do with where you're from, I notice that alot of the people who use "Dear" for formal letters are from Europe (I think!) and the ones who use "Dear" informally are from America/Canada? correct me if I'm wrong!

That's what I was thinking.

I always always taught that just putting the person's name or just launching into the email, without putting a salutation is downright impolite.

At school we were taught to write Dear as the salutation of choice for formal letters (To whom it make concern is also alright but not ideal) and anything else (eg To or Hello or Greetings etc) was too informal. Same with the ending. I was always taught to use Yours Sincerely or Yours Faithfully as they were the most formal ways to end a letter.

I use Dear for every letter and business email I write. I only write 'To' in cards.

Yeah, that's the way i learned as well and I'm in Ireland.
