1 i've never used one. do you mean animal rennet or the synthesized stuff? because most cheese makers use a vegetable based version of rennet to make their cheese. or do you mean it doesnt even have that? if so i cant say as i've never had any. at best my answer is i dont know.
what kind of vegetarian? pure? not even beef/chicken stock? let me know what you're requirements are and i can tell you more.
i use beef stock for my veggies soups and i use ham hocks to flavor my bean soups. i dont use meat in any of them though, they're just used for flavor.
