Clumpy Cheese in my Broccoli Cheese Soup.

I made broccoli cheese soup.

I melted butter in a pot, added cream and the cheddar cheese blocks. I made sure it was like a thick smooth creme before I added my broccoli.

I added my broccoli, and I think I had it on too high because it started to foam a bit. And then before I knew it my cheese was clumpy.

how do i fix this?

all i know is you must be so careful with cheese

I had cream of broccoli soup at work tonight
but wish i had had the chicken with rice instead,
probably less calories

BTW I googled it and nothing came up but a recipe for chunky broccoli cheese soup with potatoes...sounds good but I'm trying not to eat carbs.

it isnt easy. once the fat comes out of cheddar getting it back in is near impossible.

use lighter fat cheeses and blend it with a little velveeta. it has the emulsifiers to keep things from separating. also dont boil, just heat through, SLOWLY.

cheese based soups can be unforgiving.

also try some gruyere cheese, it's a good melting cheese. maybe some swiss. i wouldnt go all cheddar.

it's not impossible but it's hard to do.

make a rue add a little milk and throw it in. IF you mix it long enough it SHOULD in theory fix the problem but is not a guarantee.

lecithin would work though. whey would too i think. they're added to make american process cheese smooth and creamy. and REAL american cheese is made from cheddar and you may notice it doesnt do what cheddar does when it melts. im not sure if whey powder would actually work though since they probably add other stuff to it since it's sold as a supplement.

try bits of velveeta till it becomes smooth. it may take a 1 pound brick depending how much you've already made though.

Easy....

Use a double pot next time. Place the cheese and stuff in one, then place the pot in a larger one with water. It's nice to have a two pot pot if you intend to use it a lot. Never place the pot with cheese and cream, butter etc directly on a burner cuz it will usually cum :D ( boil ) if you have it on too high of a heat setting. You don't have to stir it as much when it's done my way... just watch it while you do it on a med. setting. Always cook the veggies separate. Then when your done melting the cheese mixture pour it over the cooked in a separate pot broccoli once it's on your plate / bowl and not before. That stops the whole shebang from getting mushy. Never ever mix the two until your ready to eat it.

no but cooking is a hobby of mine and i take great pride in learning how to cook just about anything including a variety of soups. i dont cook cheese soups because they can separate if you dont do it right but i know the basics in how they go together and how you can ATTEMPT to fix a pot of it.

i prefer vegetable and bean soups and i excel at them.

just sprinkle a little cheese on it before you reheat it in the microwave

I make a killer new England clam Chowder
and a killer Egg Drop

cant you just cut the cheese :p

cut it into smaller pieces so it melts better

or use shredded cheese instead of blocks

when i make my home made cheese sauce for my mac and cheese casserole I just use shredded cheese with the milk, flour, butter mix

what's your recipe?

this rennet free cheese is just weird though - it's very greasy.
