Bass over a pound I generally filet. Less than a pound I cook bone-in. I don't care to eat bass over about 3 pounds.
:homo: I know chefs use it for soup recipes due to the rich flavor :nod:I always fillet them, but the best eating part of the fish is the backbone, after the filets have been taken off.
