Sure! I boiled 1 pound of peeled sweet potatoes until fork tender, then 1 pound of russets the same way in another pot. I threw them together and added a palmful of dried parsley (I think fresh would have been better but I didn't have any), 1/2 cup of 2% greek yogurt, 1 or 2 chopped cloves of garlic, about 2 tablespoons of butter or butter substitute, along with sea salt and fresh cracked pepper to taste. It was all basically to taste, I just kept fiddling with it until the consistency and flavors were right. Yum!

My dad cooks the driest ass turkey ever on earth. He's a chef. It makes no sense.

Otherwise, all of the Panacea cooked food was amazing ;)
I made half russet and half sweet mashed potatoes with greek yogurt...so good, they turned out so well I was in shock.
Otherwise the vegetables and balsamic green bean thing went fine.
And the cheddar bay biscuits were good!

I'm cooking some apple and pumpkin pies right now, and baking apples.

I doubt your dad is any older than me but it might be what he was used to.

You have to remember that food not cooked enough used to be a big deal.

Certain foods such as pork were targeted if I am not mistaken.

If you look you will notice that a lot of eating places will either refuse to cook food less than medium or put in a disclaimer as a warning.

We had hamburgers and pork chops cooked til well done for example.

And lastly is he using a thermometer? I screwed up with my Turkey Breast today and let it get cooked too much. I did not check it soon enough as based on charts and the weight it should have been ok til that point.

Oh and sometimes ya just get lousy turkeys.

Does he let the turkey rest for at least ten minutes before carving it?? That can mess it up too.

Ya I guess pork can be consumed less cooked than previously thought...generally my family errs on the side of caution and cooks things through. I don't enjoy under cooked meats, so it's not as if I expect super juicy turkey...just something I don't choke on.

Like I said, he cooks for a living, he knows all the tips and tricks...at least it seems so. He always lets it sit, he uses a thermometer, I suppose he's worried my mother will scoff at turkey that isn't rubberized. Probably doesn't want to deal with that bullshit so he just blasts it.

Sad, though, it was a honeysuckle...we've gotten different brands and it just seems every year I get less and less excited about the turkey portion of the meal. Maybe next year I'll take over just to see.

My stuffing didn't come out burned & dry so I'm good down here :)
