I like the peanut butter idea on these bars :thumbup
(Am just not a coconut flakes fan :p )

Would you have an idea how many calories are in each bar? :unsure:

Without counting the add-ins (chocolate chips, peanut butter, almonds, and coconut flakes) it's 210 calories per serving (2 bars).

I have decided to incorporate whole oats into my diet (I use the quaker instant plain oatmeal) and have discovered that adding a bit of sugar free pudding mix to taste makes it so much better! I add ground flax seed too for healthy fats, and I've been back to losing 1lb per week where I was struggling before when I was eating even less.

Love that sugar free pudding mix lol!

Panacea, have you tried greek yogurt mixed w/ 2 tablespoons of peanut butter and a couple of packets of sweetener??? I use it to dip sliced apples into and it is YUMMY and very filling!!!

Derp just saw this, way to go. Lol that sounds good! I'm going to try it!

Has anyone tried kale chips? My dad eats a bag of chips per day, and lately I have been sneaking one or two and I think it's not helping my plateau. I always heard about baked kale but never tried...I will this weekend!

OMFG...I just made Chicken Adobo and it was frigging AWESOME!!! This recipe was tweaked just a little to make it SB friendly (it called for vegetable oil and a whole chicken...I used EVOO and boneless skinless chicken breasts since dark meat is not allowed). Oh, and mine looks a WHOLE lot better than the picture w/ the recipe!!! ;)

This is a Phase I recipe as long as it's served on it's on. If you have it w/ brown rice, of course, it makes it Phase II.

Famous Chicken Adobo

Servings: 6
"This classic adobo recipe is simple to make and famous with all who have tasted it. It has been modified to be a bit more saucy than traditional adobo, it is delicious served over rice."

Ingredients:

2 tablespoons Extra Virgin Olive Oil
3 lbs boneless skinless chicken breasts, cut into pieces
1 large onion, quartered and sliced
2 tablespoons minced garlic
1/3 cup white vinegar
2/3 cup low sodium soy sauce
1 tablespoon garlic powder
1 tablespoon black pepper
1 bay leaf

Directions:
1. Heat the vegetable oil in a large skillet over medium-high heat. Cook chicken pieces until golden brown on both sides, then remove. Stir in the onion and garlic; cook until they soften and brown, about 6 minutes.
2. Pour in vinegar and soy sauce, and season with garlic powder, black pepper, and bay leaf. Add the browned chicken, increase the heat to high, and bring to a boil. Reduce heat to medium-low, cover, and simmer until the chicken is tender and cooked through, 35 to 40 minutes.

I have NOT tried to the kale chips but I've heard they're good but take some getting used to due to the texture. You'll have to let me know how they turn out!!!

I just made some lemon poppyseed pancakes w/ whole wheat flour (I think the recipe is already posted here)...they're yummy, but I add a little bit of lemon extract b/c the recipe doesn't make them lemony enough for me.

I will! I'm thinking it will be ok...hell, salt and olive oil could make anything taste good imo! I made parmesan crisps and I was not a fan of the taste :yuk shocking because I love any and all cheese, they just cooked up way too zingy or something.

Those sound great!

I love adobo. If one replaces the white vinegar to balsamic or even sushi/rice vinegar it's much tastier ;)

I haven't made it yet, I had a grad party to go to last minute hehe. I will make it tonight, and thanks for the tip! I have rice vinegar!

I had a tiny taste (this will be my lunch and dinner tomorrow lol) and it's delicious!!
Yay!!! I've had some people say it's too salty for them and, while it IS salty, to me it's not overbearingly salty...and I'm not a big salt eater AT ALL. So I don't know what I'm doing differently. *shrugs*

And Defiant Tuesday, you can do anything you put your mind too. Just look at it as a new way of life instead of a diet and you'll be fine. ;)

I had to add the broccoli to the dish to dilute the saltiness, so to speak, that's why the chicken doesn't look as saucy, it's all in the broccoli lol but the taste is great.

Juz curious though...I did Southbeach Diet a few years back for it's recipes and help me change my food lifestyle. I like it as it's healthy and recipes are delicious. But what am wondering is the use of sweeteners ( can't remember if i asked b4) I know there was this study by Southbeach that sweeteners are not really helpful as the body is not able to recognize it as a fake sugar. Given that it's sweeter than ordinary/natural sugars then the excess sugar is stored in the adipose tissues as fats beating the purpose of dieting. Given too that it's highly processed that it's easily metabolized hence triggering hunger shorter compared to when one uses brown sugar or stevia etc. Now am confused if this has changed with Southbeach diet through the years :unsure:

I buy mine at Kroger and I buy the Kroger brand. It is MUCH more bitter than regular yogurt and definitely takes some getting used to. I definitely don't recommend eating it straight out of the container as is...you'll vomit, LOL

I'm fairly new to South Beach (less than 2 years) but everything I've read says artificial sweeteners are fine, but should be used in moderation (just like anything, really).
