I have decided to incorporate whole oats into my diet (I use the quaker instant plain oatmeal) and have discovered that adding a bit of sugar free pudding mix to taste makes it so much better! I add ground flax seed too for healthy fats, and I've been back to losing 1lb per week where I was struggling before when I was eating even less.

Love that sugar free pudding mix lol!

Kudos for starting on whole oats. Have you tried the whole grain ones which provides you with higher fiber and longer hunger pangs in between meals/snacks ==> faster weight loss.

Keep it up also with the ground flax. Besides that it's a good source of Omega oils, it lowers cholesterol too

I've lost 95 pounds in a year myself...I think I'm doing okay, but thanks for the advice. ;) Southbeach is good carb vs. bad carb instead of "low carb."

I quite love it, I just get the big tub of plain Quaker oats and add fresh fruit. I got the flax so cheap, and try to add a teeny bit to the meals I make.

For me, I have to watch it a bit with grains...even whole grains slow my weight loss down, I'd guess my insulin resistance is a part of that (if it is still a problem given the 91lbs I have lost lol, idk, I'd need bloodwork).

When I get closer to my goal weight, about 30lbs from the 50 I'd like to lose (people kind of look at me crazy and think I don't need to go that far, but it's the healthy weight range for my height!), I will go back to daily servings of oatmeal. Right now I've swapped it for fat free cottage cheese with fresh fruit.

/rambling LOL

If you love tofu, here's an easy recipe:

Sliced zucchini, chopped mini bella mushrooms, and comparably sized slices of extra firm (dried with paper towel) tofu all grilled up in a skillet with olive oil and topped with black peppercorn and sea salt. Tofu should be browned, zucchini and mushrooms softened and browned as well. Delicious!

I usually add way too much to tofu; sauce and whatnot, this is perfect.

Aw! Gotcha now on your controlled intake of carbs as those can covert to sugars especially aggravated with your DM 2 :smiley31:

I agree, I've always maintained my weight within my ideal body weight too in proportion to my height. It's healthier that way esp when BMI is concerned. Some people tell me though at times that i get too skinny within my IBW that they encourage me to gain weight L0L!

Keep up the good job :thumbup

I've tried that b4 but instead of zucchini- it was asparagus or pea pods. I use balsamic vinegar too for an alternative taste. I love tofu with any veggies. Thanks!

Yum, sounds good!!! I love tofu, but the rest of the family is not too keen on it. They'll eat it in hot and sour soup, but that's about it.

I'm not sure if this fits south beach but I just made pasta using

1 summer squash
lean hamburger
turkey pepperonis
and pizza sauce....

i julienne 1 summer squash

then
I cooked off the beef
put it on a plate
lowered the heat
put the squash in and covered it with s splatter guard which helped cook the squash without fiddling with it
then added pizza sauce
and herb seasoning....
then sliced turkey pepperoni

let it all simmer then plated....

It's fine as long as the sauce is low sugar and has no HFCS. You can find brands w/ less than 1G of sugar.

Thanks, PD :)

Ya, tofu is tough sometimes for people who aren't used to weird diet foods lol.

Looks yummy, Dana!

I'm weird b/c I liked tofu even before I began dieting, LOL

Haha :) Well that's good, it's super healthy. I know I'm glad I like it because I hate cooking chicken/ground turkey every day for work. Tuna, tofu and imitation crab meat save my life in the kitchen LOL!

tofu is nasty... I've tried it :yuk
Some people don't like it...but you might have just had some tofu prepared by someone who doesn't know how to prepare it, LOL And I should add that tofu has no taste...it takes on the flavor of whatever you cook it with.

I just wolfed some taco casserole. Not sure if you posted it, Natasha, I think so, but I got it on 3FC.
OHhhhhhh my, that stuff is good. Tortillas, who? I sprung for the leanest beef, put it on a bed of lettuce. Garlic, green chiles, red bell pepper, spices, olives, onions, low fat cheese, pinto beans, all baked up.

:) It's super yummy. Can be a bit high calorie, but I just have to be smart about it lol.
Yeah, but I wanna say the recipe says it's like 4 servings or something and we get at least double that out of it. I use tons of lettuce w/ it, though.
