Medically speaking, contagious diseases will not kill you very quickly. The reason for this, is that they need time to spread. The longer you are alive with a contagious disease, the more chance of that disease spreading. A disease that kills too quickly will die out, because it does not have time to spread.
This is why zombies would not work. They would be too effective.

So, unless the first zombie was very, very bad at fully eating people, the zombie-disease would never spread, because the people would just die. It is just too effective.
