Well tonight I decided mexican rice tacos sounded good. I've never made it or even had it but for some odd reason I wanted it.

So I go to the kitchen and start looking around. I find: Taco seasoning, sushi rice, tomato sauce, green onions, cheese, lettuce, and sour cream...oh yea and hot sauce of course.

So I just cooked the white rice according to directions then poured in the packet of taco seasoning. I didn't think about using the tomato sauce until after I noticed the seasoning doesn't blend well with just rice so I figured tomato sauce would work. So I just stirred in that along with some shredded monterey jack cheese.

Put it on a tortilla with some lettuce, cheese, sour cream, and hot sauce.

It's freaking YUMMY

I love doing stuff like this.

Lets keep this thread alive with times you've done this. When you know you should go shopping, but really need to just use up some stuff otherwise it will go in the garbage. So you just make stuff up with things in your kitchen.

SOunds good ANita....I love just chucking a bunch of ingredients in and seeing what happens, I did that with my pumpkin soup the other night and it was delish.

There is a website that you just type in what ingredients you have, and it gives you recipe options...but I cant remember the name of it.

A standard I use is either pasta or rice w/meat, veggies & soup of some kind all mixed together and baked. Plop on a Plate.

So far, most have been good.

I almost always have a can of tuna or chicken and some noodles on hand. I have a ton of spices too, so I just mix and match whatever I can get my hands on.

Apparently John's mom had a couple of cuts of beef left from graduation and it's been in my freezer, so I took it out to thaw some yesterday and then found a beer marinade recipe today and just happened to have everything I needed. I am super excited about dinner tonight!
