I named him that because I was faction changing/server transferring, and I already had my other paladin named the same thing. So I named him (after sex change him to a guy from a girl) what my other paladin is backwards, Cylonna --> Annolyc.DayOldHuman

I don't think its because of the spelling, i think its because of when you say it, it sounds like it.
So I am a Master of Elixirs now.
Was a pain to get the essences. Not cause the instance was hard - at 71 and with Northrend gear it was pretty easy.
I had to run Black Morass 3 times.
First time was cool - gathered 6 Essences of Infinity.
Second time I got booted from the group cause I looted 1 essence and with that "ninja-ed" on another Alchemist's Elixir quest
Today I ran the instance again and got my last 3 essences.
Was a pain to get the essences. Not cause the instance was hard - at 71 and with Northrend gear it was pretty easy.

My girl finally convinced me to start playing, I got up to level 18 and now I am bored as hell..It seems like it's nothing but endless fetch quests.

So very true, I stopped playing for awhile because I got annoyed with all the questing and grouping, but then Ana and retro got me raiding with them and it's renewed my interest big time.
sheesh, only like 1,000 above me... then again, I've only stepped foot into ICC25 once
If this were a couple of years ago, I'd probably be right up there with you... I just don't have even close to the amount of time to play as I used to. I seriously used to raid 25s 3-4 nights a week and 10s 2-3.

I hate when people quote gear score lol, do they mean addon GS or wow-heroes GS?

Closing in on 80s numbers 5 and 6... DK and warrior. DK is 77, warrior is 73 and will finish leveling with Anastasia's mage. Then I guess I'll have to level my shaman from 46... I'm just not looking forward to the grind to 58 so I can go to outland.

Well, I'm about 70% through level 77. It's good to be flying again.
I hit the Icecrown area for the first time after clearing out the Basin.
Recently dual specced as MM and BM. Been questing as MM to get my timing right for raiding later. DPS is around 750 when questing and around 1000 in dungeons. Thinking about redoing my points when I level next time to get the extra point under BM so that I can go get an exotic pet I want in the Basin. It's a spirit tiger... looks cool as hell... but I don't know if I can use him when I'm using the MM spec.
Currently trying to figure out my best melee option as a hunter. I'm at 380 on dual wield (sword and dagger), pole arm and two-handed axe.

You won't be able to use your Spirit Beast while MM, as the only reason you can tame the spirit beast is from the Exotic Pet talent in the BM tree.
As far as melee goes, most hunters find that a polearm/staff works out best as your stat stick, though I have seen some DWing, but more often than not it's a 2H.

I've been playing around with the melee stuff and the difference in DPS is minimal, but I'm wondering if I take less damage with a pole arm or axe as opposed to being up close and personal with the DW.

you're not going to take more or less damage for the most part depending on whether you DW or not. You really don't want to be meleeing at all though, your weapon(s) exist solely as stat sticks, nothing more. Unless of course you're just trying to level your weapon skills
