It's tough when you go from a large loss like we've had to losing nothing for a couple of months. I have to constantly remind myself how far I've come...but it's still frustrating, LOL

I agree. People always say I should be proud I've lost so much, but I know how easy it is for me to gain weight again and I don't want that.

It's one of my biggest fears. Not only b/c I don't ever want to go back to the way I was, but also b/c I don't want people looking at me going "aww, how sad, she had lost SO much weight and she gained it all back." *shudders*

Oh I know, it's absolutely true. Not only that, I KNOW there are a few people who would love to see me gain weight. I surely don't want to give them that satisfaction. I want to keep going, and lose more than even I thought I could.

Broccoli "Pizza" Salad
3/4 cup cooked/frozen broccoli
1 serving chopped turkey pepperoni
Mushrooms, black olives, shredded mozzarella...?? any pizza toppings to taste
2 TB pizza sauce just to wet the ingredients a bit
Little garlic and pepper
Heat up, or eat cold, whatever ya like! :p

Very low calorie and filling!

Pizza sauce and broccoli? Hmmm.....can't imagine it, but I'm curious enough to try it.

Lol I will admit my diet has brought me to eating some incredibly weird and sometimes unappetizing food. :24:

Tzatziki (Greek Yogurt and Cucumber Sauce)
(Makes about 3 1/2 cups. You can cut the recipe in half, but it's so good, you really shouldn't. Recipe courtesy of Georgette.)

3 cups Greek Yogurt (or regular plain yogurt, strained as described above)
Juice of one lemon (about 3 tbsp)
1 garlic clove, chopped
2 medium cucumbers, seeded and diced
About 1 tbsp kosher salt for salting cucumbers
1 tbsp finely chopped fresh dill (can substitute mint leaves for a slightly different version)
Kosher salt and fresh ground black pepper to taste

If you don't have Greek yogurt, strain plain yogurt using a mesh strainer sitting over a bowl. If you don't have a mesh strainer, use 2 coffee filters and sit it inside a collander over a bowl. Peel cucumbers, then cut in half lengthwise and take a small spoon and scrape out seeds. Discard seeds. (If you use the small seedless or European cucumbers with few seeds, you can skip this step.) Slice cucumbers, then put in a colander, sprinkle on 1 T salt, and let stand for 30 minutes to draw out water. Drain well and wipe dry with paper towel.

In food processor with steel blade, add cucumbers, garlic, lemon juice, dill, and a few grinds of black pepper. Process until well blended, then stir this mixture into the yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend. (This resting time is very important.)

This will keep for a few days or more in the refrigerator, but you will need to drain off any water and stir each time you use it.

I'm making this tzatziki recipe over the weekend, I'm going to eat it with sweet potato fries and kale chips! Never had it before last month, we went to a greek place and I developed a serious addiction! MMMMMMMMMMM. So good.

I'm making this tzatziki recipe over the weekend, I'm going to eat it with sweet potato fries and kale chips! Never had it before last month, we went to a greek place and I developed a serious addiction! MMMMMMMMMMM. So good.

How'd you like the recipe??? I've been craving this lately...once I get out of Phase I again, I'm going to make this again.

I made this tonight and now I'm not sure if the Coconut Milk was legal for Phase I. Uh oh!!! So, next time, I'll use 1% milk instead.

I used:
SF orange jello
1/3 cup FF cottage cheese
1/4 cup Greek yogurt
2/3 cup Plain Coconut Milk
1 teaspoon vanilla extract
A couple of tablespoons of Splenda
Ice

It was very good, but I think the serving was too much. Next time I'll freeze half of it. Ooh, and I can't wait to try it w/ lime!!!

P.S. I have never been a cottage cheese fan, so I was reluctant to try it...but it was good.

cottage cheese in a shake? hmmm have you tried almond milk?

I didn't add dill, and I seriously think I need to! I find it always too acidic from the lemon juice and I wonder if my can of crushed garlic may be bad.

I will try it again following the recipe correctly. Loooove tzatziki though. I'd love to put it on a chicken pita!

Definitely need the dill. It's what makes it, IMO.

Made this last night. It was "okay" but it needs some seasoning. Maybe some Italian Seasoning and garlic powder??? This is a Phase I recipe.

Ingredients:

* 2 cups flax seed meal
* 1 Tablespoon baking powder
* 1 teaspoon salt
* 1-2 Tablespoons sugar equivalent from artificial sweetener
* 5 beaten eggs
* 1/2 cup water
* 1/3 cup oil

Preparation:

Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well -- a whisk works well.

2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.

Nutritional Information:

Each of 12 servings has less than a gram of effective carbohydrate (.7 grams to be exact) plus 5 grams fiber, 6 grams protein, and 185 calories.

Made these cheesecake tarts. They're perfect to satisfy my sweet tooth!!!

1 envelope knox unflavored gelatin [I used 1 packet of SF lime jello instead.]
.5 cup splenda
1 cup boiling water
2 8oz bricks of LF creamcheese softened
1 tsp vanilla extract

Mix gelatin and sugar in a bowl... Add boiling water and stir till the gelatin dissolves.
Beat Cream cheese and vanilla in a bowl with mixer til smooth, slowly beat in the gelatin mixture.
Line muffin tin with baking cups..(or you could use little Ramkins or pudding cups..) Pour into the cups and refridgerate at least 3 hours... Serve with a tab of SF Smuckers Strawberry preserves (PH2)and/or a dollop of cool whip or SF syrup and cool whip (ph1). Makes about 16..
