I got a hankering for making some chili

I do not like real spicy foods so I do not want something real hot

I do not like a lot of tomato either.

If anybody has some ideas I am game to give it a go

Keep in mind the thread title. Simple :D

Just my cup of tea.... well chili in this case.... Here's a nice mild recipe for you:

1 lb. Hamburger
1 Pkge. Chili-O Mix
24 oz. Tomato Juice (You can add the amount you like depending on how thick you want the sauce)
Large can of Brooks Mild Chili Beans (I think it's 46 oz.... or get 2 small cans) But it's got to be Brooks Mild!

Brown the burger well with some dehydrated minced onion and drain well. I always put paper towels in a large bowl and put the drained burger on the paper towels to really absorb the grease.

Put burger in a large electric cook pot.... or large sauce pan. Add the Chili-O mix with 1/2 cup water. Stir thoroughly. Add the rest of the ingredients and mix well. Bring to a gentle boil. Lower the heat and simmer for an hour or so. I usually put it in the electric pot and simmer it for hours. Lets everything come together nicely and the meat is very tender.

And it's not too spicy at all.

This is a knock-off of Wendy's chili and it's very good. I think I cut the Cumin in half and added an extra teaspoon of chili powder when I made it b/c I don't like a strong cumin taste. I also didn't add the water that it says to.

2 pounds ground beef, extra lean
29 ounces tomato sauce
29 ounces kidney beans, canned
29 ounces pinto beans, canned
1 cup onion -- diced
1/2 cup diced green chilies
1/2 cup celery -- diced
3 each tomatoes -- chopped
2 teaspoons cumin
3 teaspoons chili powder
2 teaspoons salt
2 cups water

Brown the meat and drain off the fat. Add all ingredients to a slow cooker and cook for 2 to 4 hours.

NOTES: I used 1 can of stewed tomatoes instead of fresh.

Yum! Very similar to what my Mom made when I was a kid.

Yum again! Simple... all you need for good chili. Though I would probably 86 the celery.

If you ever get the urge to try, Wendy's is actually not a bad place to start. Or Steak and Shake. There's is actually REALLY good.
Mmmmmm, Steak N Shake chilli...yum!!! I would recommend not eating it late at night, though...it can do rather unpleasant things to your belly.
