No, I put the cheese on top.


What Natasha said, plus the cheese should be mixed in. The frothy eggs lost their air and collapsed under the weight of the cheese. Simple to fix next time. What I do is put the grated cheese in the pie shell first, then pour the egg mixture over it so it all mixes evenly.

Got it! However, after tonight's mess, it'll be a while before I attempt that again. My kids laughed at me. :)

I second this opinion. :) Makes perfect sense if you think about it...putting the cheese on top was just too much weight on top of those airy eggs. Next time don't whip so feverishly AND add your cheese before it goes in the oven. Let us know how it goes!!! ;)

I have a really good recipe for a breakfast quiche if you would like me to send it to you. If your kids like sausage and eggs they'll LOVE it!!!

You should make another one this weekend, just to show them how easy is is to learn from your mistakes. It will be a good lesson for them. Plus, you get to eat quiche again. Win win!!
