Potato Pancake recipe

Wife and I went to breakfast yesterday at I HOP (international house of heartburn) and I ordered the potato pancakes. They were nothing short of awful.(the service sucked too, but that's another story) My mother-in-law used to make them and had a recipe and she can't find it or can't remember how to make them....anyone know how?

PBBB doesn't like her either. She thinks she's a HMB (High Maintenance Bitch). Good to know my 12 year old can recognize one and know not to emulate her :rockon:

I like her food. Tho, honestly, I think I'm a better cook than her at times. There are things that I do that I've never seen her do and wonder why??? Like putting butter up under the skin of a chicken. She never does that. Why not? It's awesome! Little stuff like that.........

I've learned googling restaurant recipes from a friend. He loves cooking Olive garden food. So it's like home cooked Olive garden feast when we eat together @ his place :nod:
