Choco Toffee Snowballs
1 cup butter, softened
1/2 cup powdered sugar
1 tsp. vanilla
2 1/4 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
3/4 cup toffee bits
1/2 cup mini chocolate chips

Using electric mixer, beat butter with sugar till light. Beat in vanilla. Using wooden spoon, gradually add baking powder and salt. Stir in toffee bits and chocolate chips. Roll heaping tbsp. of dough into balls. Place on parchment paper lined baking sheets, placing about 2" apart. Bake in centre of oven about 15 minutes or till lightly golden on the bottom and firm to the touch on top. Let cool slightly. Dust with powdered sugar

Dr Pepper Snowballs (no bake cookies)

Snowballs

3 ½ cups vanilla wafer crumbs
¼ cup butter (melted)
¾ cup powdered sugar
1 cup pecans
½ cup Dr. Pepper

Icing:

2 cups powdered sugar (sifted)
2 Tbsp butter (melted)
1/3 cup Dr. Pepper
¼ tsp vanilla
flaked coconut

Mix crumbs, butter, sugar, Dr. Pepper, and pecans. Roll into very small balls.
Using a fork, dip balls in icing (directions to follow) and then roll in flaked coconut.

Icing- Measure sifted powdered sugar into mixing bowl. Add melted butter, Dr. Pepper, and vanilla.

Cran Apple cobbler

Ingredients
2 cups pared and sliced Granny Smith apples
2 cups cranberries
2 1/4 cups sugar
1/4 cup cornstarch
1/4 teaspoon ground cinnamon
1/4 cup brandy
1/2 lb butter
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
Sugar
Vanilla ice cream
Instructions
Preheat electric oven to 350 F. In a saucepan, combine apples, cranberries, 1 1/4 cups of the sugar,
cornstarch, cinnamon, and brandy. Stirring frequently, simmer until thick and syrupy. Place in a 13 x 9 x 2-inch baking dish.
In large bowl of electric mixer, cream butter and the remaining 1 cup sugar. Sift flour, baking powder, and salt;
slowly add to creamed mixture and mix until crumbly. Slowly add milk and stir until just moistened.
Spoon dollops of batter evenly over fruit mixture; sprinkle with sugar. Bake for 30 to 40 minutes or until golden brown.

Serve with a healthy scoop of vanilla ice cream.

Ingredients - Pie Filling
1 cup of sugar
2 heaping Tablespoons of cornstarch
2 cups milk
1 teaspoon of vanilla extract
2 egg yolks, beaten until light
1/2 can of Baker's Angel Flake coconut

Pie Filling: Add all ingredients together except the coconut into a saucepan.
Heat, stirring constantly, until mixture thickens, then add coconut. Pour into baked pie shell.


Top with meringue

4 egg whites
1 tsp vanilla
1/2 cup sugar
1/2 tsp lemon juice

Whip egg whites with electric mixer until soft peaks form,
Add lemon juice continue beating
Add vanilla extract, continue beating
Slowly add in the sugar a tablespoon or so at a time while beating on high of electric mixer.
Beat 3 or 4 minutes until the sugar is dissolved and the egg whites are forming stiff peaks.

Spread over the top of the pie and bake at 350 F for 12 - 15 minutes
or until the meringue is such a lovely shade of toasty brown that you'll consider scooping off a bite immediately. (Don't do it though, burn da mouf!)

Another coconut cream pie recipe

INGREDIENTS

* 3 cups half-and-half
* 2 eggs
* 3/4 cup white sugar
* 1/2 cup all-purpose flour
* 1/4 teaspoon salt
* 1 cup flaked coconut, toasted
* 1 teaspoon vanilla extract
* 1 (9 inch) pie shell, baked
* 1 cup frozen whipped topping, thawed

DIRECTIONS

1. In a medium saucepan, combine half-and-half, eggs, sugar, flour and salt.
Bring to a boil over low heat, stirring constantly.
Remove from heat, and stir in 3/4 cup of the coconut and the vanilla extract.
Pour into pie shell and chill 2 to 4 hours, or until firm.
2. Top with whipped topping, and with remaining 1/4 cup of coconut.
3. Note: To toast coconut, spread it in an ungreased pan and bake in a 350 degree F
(175 degrees C) oven for 5 to 7 minutes,

1 stick (1/2 c.) butter, do not use butter
1 egg


GOOEY BUTTER:

1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 (1 lb.) box confectioners' sugar
1 tsp. vanilla

Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9 x 13 inch cake pan. Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture, spreading to the edges. Bake at 350 degrees for 35 minutes

Chocolate Covered Cherry Fudge

3/4 cup margarine
1/3 cup evaporated milk
3 ups sugar
12 ounces chocolate chips
7 1/2 ounces marshmallow creme
1 teaspoon vanilla extract
6 ounces cherry chips

Combine margarine, evaporated milk, and sugar. Heat to rolling boil. Boil for four minutes on medium heat, stirring constantly to avoid scorching. Remove from heat. Add chocolate chips, marshmallow creme, and 1/4 cup of the cherry chips to sugar mixture- mix well. Add vanilla. Immediately poor into 9x13 foil lined pan. Microwave remaining cherry chips (about 2 minutes until smooth). Use pastry bag (or ziploc with small hole at end) to drizzle the melted cherry chips on top of the fudge. Cool fudge for 4 hours at room temperature. Seal in airtight container. Makes 3 pounds.

MONKEY BREAD
3 packages of buttermilk biscuit tubes
1 cup sugar (divided)
2 teaspoons cinnamon
1 cup butter
1/2 cup brown sugar

Take 3 packages of buttermilk biscuit tubes (10 per roll) and cut each roll into 4 pieces. Drop roll pieces into 1 cup sugar and 2 teaspoons cinnamon. Drop sugar-coated pieces into a well buttered Bundt pan (don't squish roll pieces when placing them in the Bundt pan).Put 1/2 cup of the left-over sugar/cinnamon mix and 1/2 cup packed brown sugar and 1 cup of butter (2 sticks) into a small saucepan.
Bring this mixture just to a boil; remove from heat immediately. Carefully drizzle over the roll pieces.
Bake at 350°F for 30 minutes.
Cool slightly in an upright position, then tip pan over onto a plate to remove monkey pull-apart bread.


This stuff tastes so damn good...its addicting imo

Mint Cookie Candies

12 ounces white candy coating, coaresly chopped
6 teaspoons shortening, divided
1/4 teaspoon green food coloring
4 mint-flavored creme-filled chocolate sandwich cookies, crushed
2 (4 2/3 ounce) packages Andes Mints Candies

In a microwave-safe bowl, melt candy coating and 4 teaspoons of shortening; stir until smooth. Stir in food coloring. Pour evenly into miniature muffin cup liners. Sprinkle with cookie crumbs. In a microwave-safe bowl, melt mint candies and remaining shortening; stir until smooth. Pour over cookie crumbs. Let stand until set. Makes 48 candies.

Snowman Soup

Assemble in a small zipper food storage bag mix the following ingredients:

1 individual pack hot chocolate mix
3 Hershey's chocolate kisses
10-15 mini-marshmallows
1 small candy cane

Print the poem below. Cut it out and staple the tag to the top of the Snowman Soup baggie.

With freezing weather drawing near, you’ll need to warm the spirit.
So here’s a little Snowman Soup, complete with stirring stick.
Add hot water, sip it slow, it’s sure to do the trick!

It was yummy! My husband looked at it when it first came out of the oven and said "I dont think its done yet" :smiley24: lol


lol yeah it has to cool off .. but me, I like a piece about 3 minutes after I yank it out of the oven LOL
