Many people eat the egg white only disposing the yolk due to a fear of fat and cholesterol. But in doing this, you are throwing out the most nutritious part of the egg! Egg yolk has the highest concentration of nutrients and amino acids required for optimal brain function. The yolk contains 100% of the carotenoids, essential fatty acids, vitamins A, E, D, & K. These fat soluble vitamins support your thyroid, reduce the damaging effects of diabetes, boost your metabolism and immune system, reduce your risk of cancer, encourage healthy bones, teeth and skin, and help you feel fuller longer. In fact the only nutrient missing from an egg is vitamin C.

Unless you have a cholesterol problem there's absolutely no reason to not eat the yolk.

I probably have the same most weeks in varying ways...I take a boiled egg for a snack @ the office....I LOVE making poached eggs when I'm home. I was making a spinach/egg mcmuffin kinda thing most mornings for a while, yummmmm.

Dammit, now I'm hungry.....

Can't imagine throwing away perfectly good food simply because too much of it could harm you. Too much water can kill you, I don't think I want to give it up though.

A little commonsense is all that is needed.

Blood cholesterol levels (both HGL and LGL) are more related to fat consumption (saturated to LGL, unsaturated to HGL protective factors) and triglycerides (carbohydrates, refined sugars) than food cholesterol alone (if at all). Whole eggs are lean, sugar free, and contain protein and omega 3s. Their cholesterol counts should not scare off your average person, especially the overweight trying to find a healthy diet.
