Environment plays a huge role. Access to healthy food, safe spaces for exercise, social support, and stress levels often shape long-term health more than sheer willpower, which can only do so much against systemic and environmental factors.

I think it is more about will power. You might be able to avoid salt and sugar for health but if you do not have the will power you cannot make it your life long habit
