preferably healthy ones!
heres what I bought:
fresh green beans
fresh carrots
broccoli
roma tomatos
steak pieces
chicken breasts
raddishes
onions
celery
beef broth
chicken broth

I'm hoping to make a few meals tomorrow that i can save so i can eat healthy all week without having to cook every night. IDEAS PLEASE! I <3 you guys!

CHICKEN POT PIE WITH BISQUICK
1/3 c. butter, melted
1/2 c. Bisquick
1/3 c. chopped onion
1/4 tsp. pepper
1/8 tsp. thyme


Combine the above in a saucepan to boil. Add:

1/2 c. chicken broth
2/3 c. milk


Heat to boil, constantly stirring, boil 1 minute and stir. Add:

1 3/4 c. chicken
10 oz. frozen peas & carrots


Mix well with spoon, turn off heat.

TOPPING:

1 1/2 c. Bisquick
3 tbsp. hot water
3 tbsp. softened butter

Form dough and put on top of above mixture in a 9 inch square dish. Bake in a preheated 375°F degree oven for about 45 minutes, or until crust is golden and lightly browned on edges.

Oriental Beef and Broccoli Stir Fry

1/2 cup of picante sauce
2 tablespoons of light or reg. soy sauce (optional)
1 tablespoon of water
1 tablespoon of corn starch
3/4 pound of boneless beef top sirloin steak, cut into 1/2 x 2-inch strips
2 garlic cloves, minced
1 tablespoon of finely shredded fresh ginger
1 tablespoon of peanut or vegetable oil
1 teaspoon of Oriental sesame oil (optional)
1 1/2 cup of quartered mushrooms
1 1/2 cup of 1-inch broccoli florets
1 red bell pepper, cut into 1-inch pieces
4 green onions with tops cut into 1-inch pieces
Hot cooked rice, optional

Combine picante sauce, soy sauce, water and corn starch, mix well and reserve. Toss beef with garlic and ginger. Heat 2 teaspoons of the peanut oil and, if desired, sesame oil, in 10-inch skillet over medium-high heat.
Add beef and stir-fry 3 minutes or until no longer pink. Remove beef with slotted spoon; reserve. Add mushrooms, broccoli and red pepper; stir-fry 3 minutes or until vegetables are crisp-tender. Add picante sauce mixture, reserved beef and green onions; cook and stir 1 minute or until thickened. Serve over rice, if desired. Serve with additional picante sauce. Serves 4. Chicken may be substituted for beef

slow roasted tomatoes
8 large tomatoes 4 tablespoons kosher salt 3 tablespoons fresh ground pepper 1/4 cup sugar 3 tablespoons dried thyme 2 tablespoons olive oil


  1. Heat oven to 250.
  2. Slice tomatoes thickly, to yield about three slices per tomato.
  3. Place on a baking sheet.
  4. Mix spices and sugar.
  5. Brush tomatoes with olive oil, and sprinkle with a large pinch of seasoning mixture.
  6. Roast the tomatoes for 3 hours

you can use low fat bisquick .. and substitute you can't believe it's not butter for butter and it is.

thats true, src, thanks for the suggestions! Right now I am trying to only eat whole foods, I've been on a diet for 9 months now and I'm stalled so I'm cutting out all processed foods and pretty much anything that is white (bread, flour, potatos, rice, etc). That's why I'm having such a hard time thinking of different ways to cook all my veggies. I'm thinking I should just steam them all and eat them how they come lol. : / I want to make some kind of stew but I just bought a crock pot and don't know the first thing about making stew in it.
