Prick the skin of a potato all over, microwave it for 5 minutes, cover it in oil and stick it in the oven on a high heat for about 25 minutes - half an hour, it will have a nice crispy skin.

Just call your friends and get them to take turns bringing you over food one day a week each day this week. I'm sure you could use a little help around the house as well since you just had surgery. Sidenote: I didn't realize you had surgery recently Audra. I hope it was nothing serious and that all went well and that you are healing nicely.

Mac N Cheese, peanut butter and jelly, grilled cheese sandwiches, TV dinners, spagehetti (that always seems to last awhile at my house)
