Why do they have the hole in the middle ? For stocking purpose ? Not like it helps you hold them any better. Maybe dounut on a stick....

I've heard a couple things in regards to this. I heard they are easier to remove from the water they boil them in. I've also heard it's because the middles always came out raw, otherwise.

I adore custard doughnuts. I had like a week when pregnant where I just HAD to eat them but couldn't find them so had to settle for jam and chocolate filled ones.

I read sometime ago that the hole in the donut (as we call it in Spain) is due to the needed to reach the same cooking point for all the donut.
As they told in the article, that would be dificult to achieve if there were no hole, and the middle section of the donut would remain rawer.
However...who knows..
