This year I've noticed that M&M's have put out holiday flavors. Mint, Cherry Cordial, etc.

The Cherry Cordial are ok. But the mint ones are the bomb!!!!!!!!!!

This weekend I will be taking a bag of them and putting them into Tollhouse cookie mix then spreading it into a pan and seeing what happens. They're too wide to put into cookies and I've been wanting to try the pan variation of the recipe. So, that's what I am going to do. I'll keep y'all updated ;)

I've also been pondering how to make chocolate Tollhouse cookies. I know I need to add cocoa powder to the mix. But, don't think I just add a 1/3c or 2/3c to the flour and not need more liquid? But another egg would be too much. I don't think I can sub 1/3c or 2/3c of flour for the cocoa? Don't I need all the flour? Or do I? One more yolk or one more white?

Cuz ChocolateTollhouse Cookie Bars w/Red, White & Green Mint M&M's would be so 'festive'!

Are you using 2 eggs and a teaspoon of vanilla extract?
Yep. I use the recipe on the back of the package of chips. It's a tried & true one. But I must make them chocolate!

Nestle used to put out chocolate mint chips around the holidays. I'd put half the bag in a batch of regular tollhouse and they were awesome! Just that hint of mint. But I cannot find those anywhere any longer.

Even the green mint chips are hard to find.

When I'm jonesing for some I usually put a 1/4tea mint extract in them but it's not the same.

Heck, I can't even find Russell Stovers Chocolate Mint meltaways now. I have to go online. Walgreens always carried em. grrrrrrrr It's a freaking conspiracy I tell you.:ninja

:humm: I wonder if adding a bit of melted butter/margarine would work with adding the extra cocoa? That's what I would try. OR if you add 1/3 cup of cocoa you could use 1/3 cup less of flour.

Personally I would try an extra egg white. That should give you enough liquid I would think...And if it works I'll send you my addy so you can thank me. ;)

More butter is an idea. Tho it's room temp. Not melted. 2 sticks. Whipped a bit before I add the sugars ;)

I'm just wondering if the sub for flour w/cocoa will change the consistency? Or does it matter? I guess I'll find out eh? Perhaps another 1/2 stick or less and just adding the cocoa?

I'm also considering adding some chopped nuts to cut the sweet of it all. Walnuts? Pecans? Or Peanuts? Oh My! :24: Or Almonds :nod:

Funny that... I have no problems tweeking a recipe unless it's baking. Precision & proportion count there so I get all intimidated and unsure. Freaking fractions ;):cool

But once I get that base right.............. They're gonna be good and oh, the options......

I called my mom. :D She knows about such things. She said to leave everything the same and just add a couple tablespoons of vegetable oil. :thumbup

Ok. I used 2/3c cocoa. I also added 1 tablespoon veg. oil to each egg I added. I used 1 bag of the mint M&M's and I added 1/2 a bag of chopped walnuts.

Ah, yum! I sprinkled powered sugar on top when it came out of the oven.

They turned out pretty darn good. When I was at the grocery store this afternoon I put a 1/2 gallon of Peppermint ice cream in the cart to go with ;)
