So this might be a stupid question, but do you have to refrigerate chess pie?

I asked a friend and she said "Well it has eggs in it so DUH!" But I don't understand why. It is cooked. So how is it any different from cakes and cookies?

I put it in the fridge just to make sure, but I need to know the truth, damn it!

Yes. But it is firm enough to hold its shape when a slice is cut out. It doesn't spill out all over the place or anything. So yeah....kind of like a creamy cheesecake.

Speaking of cheesecake...today is National Cheesecake day and the Cheesecake Factory is celebrating by selling half price cheesecake slices. I am sad because all of my friends are too busy to go with me. *whine*

So is this chess pie or chess pie with meringue on top aka "Chocolate Meringue Pie"???



When I was in law school I baked up a storm, and one of the things I learned and conquered was meringue - whipped by hand and all made from scratch.

In humid weather it can take forever and a day for that meringue to set!

And then on one of my pies, the egg started to separate??? Does anyone know why it did that????

Wooo! All of my girlfriends live over an hour away. I need a closer one.

Mine looks like that....but without the meringue. My new-to-me cell phone has a crappy camera but I think you can get the idea.

I am hoping this caramel one will come out alright as well. It seems too simple to be true. You just boil a can of sweetened condensed milk for 4 hours and pour in a crust. I don't know if I have much faith in it. Guess we will see!

And Janie- I have no clue what kind it is. I just found it, but I'll agree with you on the meringue part.

Are you sure you didn't over or under beat?
