Its a hard one! I would say David Grohl maybe. Obviously Nirvana were ground breaking and awesome but he didn't have too much creative imput into that.

Tom Waits springs to mind, he gets better every album

most blues musicians tend to improve with age also.

Pearl Jam have recorded some of their best stuff in the past few years, I think they're all over 40 now.
