represent love when a rose has to eventually die?

Becuase love is an abstract noun so we can't see or touch it and a rose is a love token which can be given. It's what the rose symbolises and what the connotations are to the people.

I'm studying Love in English Literature and we've had to learn a ton about love tokens, courtship, romance, types of love etc etc so we can compare different eras of love to one another.

Flowers used to be used as a language. I have it in a book somewhere. For example, red hibiscus means something to do with beauty.
Every flower means something.
And all flowers die, what's the big deal anyway...

Think about life in general, we live and we die. If you love someone more than likely one of you is going to die first, that would be the rose dieing, and going through life with love you will have problems, arguments, even some serious fights, that would be the thorn in the beauty of love.

Because not all Love last forever and even if it does, you don't all in all I think it signifies something beautiful starting and ending.

The rose symbolizes love because the rose represents how delicate and precious love is.

Love is very vulnerable, as is the rose. While both can be viewed with such an ammount of inspiration and admiration, both decay and wither away as time passes by. As does life, which is a part of love. The mortality of the rose conveys the different stages of both life, and love, as though they are one in the same. Beautiful untill the very end.

In my own opinion...

...I believe a rose usually symbolizes love because of it's beauty as love is very beautiful, but it also unveils the truth behind love. It eventually dies when the two whom were once joined as one are now departed from this world. Though love never dies in all actuality. New roses grow to replace the ones that have died. A symbol of the "seeds" we leave behind in this world and through their hearts we shall always live on. A rose is a perfect symbol for love to be quite honest. One only needs to take the time to study it in order to see the relevance it has to our own lives in this day and age. That is just me of course.
