Sounds more like prison hooch to me. I know how to make real brandy but you can get 12 years in prison for that over here if you havent got a license. Good luck though, it will probably be rank but get you'll get well pissed!:D:thumbup

define 1 package yeast. are we talking an actual yeast strain used for wine and brewing?

i'd think a fermenter for the initial ferment would be best and then racking it off and going for a secondary. then let sit till clear. IF you want.

i study brewing and wine making as a hobby.

you can use that. the raisins have the sugars needed to start the fermentation process. 10 pounds of sugar sounds a bit much. i would suggest putting it together without the sugar and seeing how it tastes. if it's pretty sweet i wouldnt bother with the sugar. 4 pounds of raisins is a lot of sugar for the yeast. especially for 3 gallons of water plus fruit. it will have a good raisiny/grape note (mostly raisin though). i'd maybe cut back on the lemons a smidge, it might make it too citrusy. the strawberrys are a good choice. they can have a good amount of acidity so 4 lemons may not be needed. try 1 or 2.

Brandy - Wikipedia, the free encyclopedia also read this. it gives good insight on brandy.

also try this on a smaller scale, like 1 gallon. its easier to rack off from the fruit, and if it doesnt turn out well it's only a gallon to ditch, not 3-5 gallons. that means less losses and less money lost.

i`ll admit, i dont have the slightest of what i`m doing. i just found this in my grandmas cook book and thought i would try it. now that i have a intrest in making it you might be getting a few e-mails in the future asking some questions because i`m sure i`m going to try this again

ok no problem. brewing and wine making is something anyway can do with a little know how and the right ingredients and techniques. do a google search for beer and wine making forums. there are plenty out there.

try something easy, like a mead. it takes time but that's usually it, not much else you need to do. how long? a year or more. but its easy to do and requires very few ingredients. water yeast and honey is all that's needed but you can add fruit and spices.

We make beer at home sometimes - it's pretty good but kind of a pain. It's easier to go to the store and grab a sixer out of the cooler. ;)
