Cedar Waxwing. They really do look like they are made of wax. It's hard to distinguish their feathers.

Swan info.. 1/320 sec, f/9.0, ISO 100, 100-400 mm set @ 100mm

I dunno. I point the camera, choose my settings and push the buttons. It's the light angle I guess.

You might be getting that impression because of the bokeh. What's bokeh she axes? Well, bokeh in plain English is blurring the background via adjusting the f stop setting. When you do that it brings the subject to the forefront and one isn't distracted by the background. Many people that are not up to speed think that is incorrect but it isn't. It's actually the correct way to do it unless you want to see the background. Ie: In this picture you don't want bokeh because the number of boats in the marina is what makes the joint look busy. You want to be able to see it all. If it were blurred that would suck.
