The molecules need to spread out to lock into a solid. When it cools slowly the molecules slow down but don't spread out. When they bounce because of the vibration when the guy hits the bottle, the instant they move to the right position to lock, they freeze.
Your beer does the same thing. Ever pop one in the freezer to get it real cold, then it starts turning to ice as you pour? Same principle.
Along the same lines, microwaving a liquid without a turntable can be dangerous.
