Over the past year I have truly come to enjoy the art of cooking...I mostly cook healthy dishes, but you'd be surprised at how good some of them are...you'd never know you were eating something healthy. Anyways, if you have any yummy recipes-healthy or not, that you love, post them here! I'll start.

Hot/Cold Twiced Baked Potato Salad

Servings | 6

Ingredients

24 oz cooked red potato(es)(3cups)
1/2 cup light sour cream
1/3 cup Kraft Miracle Whip Non-Fat Salad Dressing
1/3 cup scallion(s)(2 Diced)
1/2 cup Kraft Free Shredded Cheddar Cheese
6 slices Oscar Mayer Ready-to-Serve Bacon
2 tsp dried dill weed
1 tsp mixed cracked pepper


Instructions

Slice potatos to desired chunks and boil untill done.

In a seperate boil Mix Sour Cream, Miracle Whip, scallions, dill, and pepper, mix well & set aside.

Even though the bacon is already pre cooked, place bacon in the microwave for about 20-30 seconds to get it a lil' crispy, then crumbled and add to dressing mixture above.

If you want to serve Hot:
Drain boiled potatato and add to dressing mix. Stir with a fork and mash slighty (just a few you still want lots of chunked potatos)add cheese to the "top" and serve!

To serve cold:
Add the potatos to the dressing and mash slightly just as above (do not add cheese)refridgerate for about a 1/2 hour than "mix in" the cheese!



Special Notes

I hope you enjoy this! I prefer it cold. This can be made with Turkey bacon (or sausage, or non fat sour cream) to reduce the points or no bacon. It is a really good alternative to the traditional kind and each serving yeilds just over a 1/2 cup. Perfect for cook outs, enjoy!


Chicken and Rice Casserole
Servings | 8

Ingredients

4 item chicken breast, cooked, skinless
2 cup cooked white rice
1 cup Campbell's Healthy Request Cream of Mushroom Soup
1 cup Campbell's Healthy Request Cream of Chicken Soup
2 second spray PAM Cooking Spray

Instructions

Shred chicken breasts, cook soups with water. Spray 13X9X2 inch baking dish with PAM. Cover dish with rice, layer shredded chicken on top. Pour soups over chicken. Bake at 350 till bubbles.

Breakfast Sausage Casserole

1 pkg. (12 oz.) fresh breakfast sausage, cooked, drained and crumbled
4 cups cubed day-old bread
2 cups (8 oz.) shredded sharp cheddar cheese
2 cans (12 fl. oz. each) NESTLÉ® CARNATION® Evaporated Milk
10 large eggs, lightly beaten
1 teaspoon dry mustard
1/4 teaspoon onion powder
Ground black pepper to taste

Recipe

GREASE 13 x 9-inch baking dish. Place bread in prepared baking dish.
Sprinkle with cheese. Combine evaporated milk, eggs, dry mustard,
onion powder and pepper in medium bowl. Pour evenly over bread and
cheese. Sprinkle with sausage. Cover; refrigerate overnight.
PREHEAT oven to 325° F.
BAKE for 55 to 60 minutes or until cheese is golden brown. Cover
with foil if top browns too quickly.

Here's a good recipes for left over chicken, or turkey.


Asian Sesame Noodle Salad


12 ounces egg noodles
1 cup bean sprouts
4 1/2 tablespoons sesame oil, divided
1 cucumber
3 tablespoons balsamic vinegar (or red wine vinegar)
2 tablespoons soy sauce
2 teaspoons granulated sugar
1 teaspoon hot chili oil
1 cup cooked chicken, or turkey, shredded
2 tablespoons toasted sesame seeds

Cook the egg noodles according to the pkg directions. Drain them and toss them with 1 Tablespoon of the sesame oil. Also rince and drain bean sprouts.

Peel the cucumber, remove the seeds and julienne (length wise.. make long thin strips), In a separate dish, combine the rest of the sesame oil, balsamic vinegar, soy sauce, sugar and hot chili oil.

Put the noodles in a large dish, top them with chicken, bean sprouts, and cucumber. Drizzle with the sauce. Refrigerate until chilled. Sprinkle with sesame seeds and serve.

Peach Dumplings

1 cup sugar
1 tablespoon butter
2 cups hot water
2 to 3 cups fresh sliced peaches, or frozen thawed
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar, optional
1/2 milk or cream, more or less
cinnamon sugar, optional
In a medium saucepan over medium heat, combine 1 cup sugar, butter, and hot water. Add peaches and bring to a boil. In a medium bowl, combine flour, baking powder, salt, and 1 tablespoon of sugar, if using; stir in milk or cream to form a stiff batter.

Drop large spoonfuls of batter onto the boiling fruit. Cover and cook for about 20 minutes. Spoon out dumplings and fruit into bowl. If desired, sprinkle with a little cinnamon sugar and serve with cream or ice cream. Serves 4 to 6.

recipe: macaroni and cheese



items:

a stove
a pot
a strainer
a wooden cooking spoon
some water
some electricity or gas, depending on what kind of stove it is
a dollar or two
an outfit of cloths, plus shoes
an automobile with useable gas, with car keys


instructions:

> put on outfit, put on shoes
> put some water in the pot; place on stove
> use car keys to start car
> drive to the store
> go to the quick dinner aisle, pick up some mac-n-cheese
> go to the checkout line, pay for the mac-n-cheese with the dollar or two ( depends on the brand )
> return to the car, start it up with the keys, and drive back home
> go back inside the house
> return to the kitchen, turn on burner; place pot on ready burner
> wait for water to boil; while waiting, get out dishes to support dishing out the mac-n-cheese
> once boiling, open box(es) of mac-n-cheese; remove cheese packet
> pour mac-n-cheese into boiling water; stir with wooden cooking spoon
> stir every minute or so to prevent macaronis from sticking to each other
> once ready ( to determine this - take one out and eat it, if it isnt firm or too squishy, its good ) remove from burner
> turn burner off, empty cooked macaronis in a strainer; place pot on a cool surface ( not the hot burner )
> return to macaronis to pot after draining well
> add some water
> open cheese packet; stir into the macaroni
> mix until the cheese is evenly distributed among the macaronis
> dish out the mac-n-cheese
> eat the fruits of your labor
> shit the fruits of your previous labor

Recipe for disaster:

Materials:
-Microwave
-Tin foil
-Fork
-Spray paint canister
-Play dough
-Toilet paper roll

Procedure:
-Put on hockey equipment, eye protection
-Invite friends over
-Place objects in microwave
-Get trustworthy friend to hold fire estinguisher
-Set to boil for 1022 minutes
-Hide the remains...

Recipe for a mess

1 new animal-loving roommate
1 new animal-loving roommate's baby kitten
1 box of kitten food, poured into a dish
0 litter box because the roommate forgot that even cute little kitten's need one

Directions:

Get a new animal-loving roommate. Come back home to find that animal-loving roommate has just purchased a baby kitten. Ooo and ahhh over how cute the kitten is as she eats her kitty food. Go to bed. Wake up to find cat crap all over the apartment. Wake roommate up. Watch roommate clean up kitty poo. Wave goodbye to roommate as she goes to buy a litterbox. Pick up kitten and tell her that she has been adopted by somebody with limited grey matter.

Nutri Birdi Bars
Ingredients:2 eggs
1/4 cup walnuts
1/4 cup raisins
18 oz cornbread mix
1/3 cup apple juice
1/4 cup applesauce
1/2 cup defrosted mixed vegies
1/2 cup broccoli

Procidure: wack every thing into a blender(whole eggs taste better)
and put in a baking tray cook at 400 degrees for 20 mins
Notes: i know it says Birdi Bars but i cooked em for my 8 year old brother
he loved em my dog also likes them. Treat for the whole family
