Omelette Fillings

And I use water instead of milk in the eggs...

I like garbage omelettes when I make them at home. Meaning, if there are leftovers in the fridge, chances are it will make it in my omelette. Leftover spaghetti is BRILLIANT in an omelette...with some fresh tomatoes, some Italian cheeses, and a little fresh basil...good god that's...erm...good!

I've also put in leftover steak with some various peppers and of course some sort of sharp cheese. I also like just a regular ham and cheese one or cheese and bacon, or cheese and sausage, on occasion with various veggies in it. Veggies and olives are another way I like 'em with goat cheese or feta.

I guess what I'm trying to say is, I love omelettes! One because I love breakfast food and two, you can do anything with them.

Next up, the perfection that is the Irish boxty...*drool*

WOW! You are inventive! I would never have thought of putting spaghetti in an omelette though.

The rest sounds really good! What is Irish boxty?

Try it sometime. Leftover spaghetti in and of itself is better than when it's first made because the flavors have a chance to come together...put it in an omelette...oo...you could even throw a little Italian sausage in with it...and it's just divine! I sometimes do it more like a frittata which is even easier than an omelette because you bake it and don't have to flip it. Man, I'm getting hungry! lol

Are you talking about the actual spaghetti noodles? Or just the sauce?

OMG! Boxty sounds so awesome! Will any potato pancake recipe do? No wonder you drooled. :D

Noodles and all my dear! It sounds really strange, but it works! lol In fact, it's better if there isn't a TON of sauce on it because the noodles bake/cook up in the egg much better. Try it...seriously, it's a really good combo!

The boxty is the bomb phenom! The way the pub does it, it's almost like hash brown consistency and then it's grilled toasty...sooo good! I would think you could do it any way you like so long as you can make it thin enough to fold over.
