Homemade Gluten Free "Nut Butter" Cookies

Made "Nut Butter" Cookies... They came out better than the night before. I gotta figure out why the edges get so dark. If theres any way to firm them up a tad without overcooking them.

Recipe if you want a stab at it...

Half cup of Sun Crystals (Stevia & Pure Cane Sugar)
Half cup of Truvia
One cup of peanut butter (I used Jiffy Natural with honey)
One egg
One package of Nature's Path organic almond butter granola bars

I should of refrigerated but didn't...
Grease a cookie sheet...
Oven 350 degrees
roll into balls
press with a fork and I cooked for 10 minutes...

Now that I think of it I should of just used parchment paper, which I had... I'm such a man sometimes.
(I didn't use the tin in the picture to bake the just merely as a cooling surface... It was too deformed LOL)

im sure your cookies are very nice dana...

but ill be damned if im putting anything "nut butter" in my mouth

Ok other than the dark edges the cookies were a success. After I waited for them to cool they firmed up enough.

electric ill try running them 98 minutes. The oven runs hot. I never take that into account.

ummmm if you run them 98 minutes your gonna have the fire department visiting your house?! LOL

i asked because i am back to a gas stove (LOVE IT) and i have had to vary some cooking times on different items. try that small adjustment and see what happens and let us know

If your oven runs hot, try reducing the temp a little and see if that helps. Otherwise I'd take them out while they're still a little soft. They'll continue to cook on the sheet. I personally don't like my cookies hard, but some people do.

neither do i but when i first took them off they were so soft one broke in half... I put them on the tin roaster to cool and they firmed up perfectly not too soft not too hard.

I dub them "rustic" chocolate chip peanut butter cookies. I didn't burn them BUT... the peanut butter is organic and freshly ground so it has peanut pieces in it and I put too many chips in it so it kinda crumbled when i tried to press them with a fork.
