Help me with lunches

Ok sounds easy right? Well here's the catch. I have no heating or cooling options here at work...I sit outside 10 hours a day here. I also have very little time at night. i get home at 7 and in bed by 9:00-9:30, and during that time I have to bathe, feed and put kid to bed, and eat dinner...sometimes cook it too. So time is extremely limited. Also, due to health issues I am supposed to be eating a low carb diet. I also really prefer natural stuff without additives or high sodium content. So that kind of puts me in a pickle. It's hard to pack enough food for 10 hours also. I have taken to fasting at work some days or just eating breakfast and dinner, because I have a hard time finding food that keeps well. I also really don't love salad too much. I'm stumped!

Pack what ever you want in a little cooler with ice packs you freeze each night. I used to do sandwiches and carrots and celery as well as fruit. When I was working jobsites digging you had to have it with you or you went hungry. You can take small containers of prepared food if you can handle eating it cold. It takes some getting used to. I often took a can of tuna and a fork and had that with fruit or chips for lunch. Cold spam makes a good sandwich also.

Sandwich wraps (whole wheat tortillas, sour cream or cream cheese, some deli meat), pickles, celery or carrots and hummus, string cheese sticks and turkey pepperoni. Check my South Beach Diet recipes thread for Nessa's Oatmeal Bars...those are great and they fill you up. If you can take a small lunch cooler you've always got the option of Greek yogurt mixed w/ peanut butter...take an apple to dip in it. One of my favorite snacks, actually.
