Eggplant

Cooked the only way I now eat it..

You cut it up (not too thick, more on the thin side) put some paper towel down, spread the egg plant out and put salt on it..

Leave it for 2-3 hours

Come back and dab off the liquid, run under water to wash salt off and dry again

Dip in some whisked eggs

Bread crumb it on both sides

Oil the pan

Cook it for about 30-40seconds each side and wait to cool so you can eat it

I hate egg plant but boy this is good!!

I used to hate eggplant but acquired the taste by eating it breaded. The breading helps cover up the bitterness of the eggplant until you get used to it.

I also love it cooked this way. :thumbup What's also good is when you coat it in a light batter and flash fry it. Yum.

Yeah we call them Aubergines and Courgettes. When I saw the title of this topic I was thinking wtf is an eggplant.

I'm not a great fan of Aubergine but I love Courgette. It's so yummy.
