Cooked the only way I now eat it..
You cut it up (not too thick, more on the thin side) put some paper towel down, spread the egg plant out and put salt on it..
Leave it for 2-3 hours
Come back and dab off the liquid, run under water to wash salt off and dry again
Dip in some whisked eggs
Bread crumb it on both sides
Oil the pan
Cook it for about 30-40seconds each side and wait to cool so you can eat it
