Do you think they could be made with cheddar or colby jack instead of mozzarella?
Mozzarella has a unique melting method and it is supposed to be a smooth melt not a rushed melt like cheddar does with grilled cheese. (where you would use a cheddar or a Gruyere cheese)

But I don't have mozzarella, well I have some shredded, but that just seems like a PAIN! So they're just cheese for now.

I might have Matt swing by the store and get some on his way home... I am seriously craving them!

You can do other cheese, but PJ is right - others will melt faster, so you have to make sure you have very hot oil to fry them in in order to brown the outside before the cheese seeps out. Helps to get the cheese VERY cold before you fry - like in the freezer for 30 minutes or so. Oil should be about 360-375. For mozzerella it can be as low as 325. Pretty important to have a dep-fry thermometer to know the oil temp for sure.

yes I've seen them made with all kinds of cheese - in greek restaurants they make them with haloumi cheese I think


and damnit you made me want some!!
