Hey Natasha, do you have a recipe for homemade sweet potato fries?

Here ya go...

Ingredients


  • Extra-virgin olive oil, for lightly coating
  • 6 large sweet potatoes, peeled and sliced like steak fries
  • 2 teaspoons kosher salt
  • Chili powder
Directions

Preheat oven to 425 degrees F.
In a large mixing bowl, drizzle oil over the potatoes and toss to coat. Add salt and toss. Sprinkle lightly w/ Chili Powder (or heavily if you like it spicier). Place sweet potato fries in one even layer onto a baking sheet. Keep space between them so they get crispy on all sides. Bake in batches.
Place into the oven for 10 minutes, then flip them over. Place back in for 10 more minutes. They should be soft on the inside and browned on the outside. Let them cool for 5 minutes before serving.
* You may substitute baking potatoes for sweet potatoes. However, when placing back into the oven change cooking time to 5 minutes instead of 10.

Hey, Goddess, I actually did this recipe tonight for homemade sweet potato fries and we had then w/ the spicy sriracha sauce that I'm gonna post the recipe for, too. It was REALLY good!!!

Chili-Spiked Sweet Potato Fries

1 sweet potato per person, preferably ones that are shaped long and skinny
1 Tablespoon olive oil
kosher salt
chili powder

Preheat the oven to 400°. Spray a baking sheet with non-stick coating or line it with aluminum foil.

Slice the sweet potatoes approximately 1/8-inch thick. Thinner than this and you end up with brittle chips (also good!), and thicker fries tend to get mushy.

Pat the coins dry with a clean kitchen towel and then toss them with the olive oil in a small bowl. Arrange them in a single layer on the baking sheet and sprinkle them with salt and chili powder.

Bake for 10 minutes and then flip the fries over. Sprinkle the other side with salt and chili, and continue baking for 5 - 10 minutes until the centers are tender and the edges are slightly crispy. Let the fries cool for 5 minutes on the tray to let them firm up a bit.

Serve while still warm with spicy sriracha dipping sauce.

Spicy Dipping Sauce with Sriracha Sauce for Sweet Potato Fries or Roasted Vegetables

(Makes just over 1/2 cup dipping sauce, enough for a big cookie sheet of sweet potato fries. Recipe created by Kalyn with inspiration from Spicy Mexican Slaw.

1/4 cup sour cream (I used light sour cream)
1/4 cup mayo (I used regular mayo, but next time I would probably use light mayo)
Sriracha sauce to taste (about 1/2 - 1 tsp.)
2 T fresh-squeezed lime juice

Sweet Potato Fries for serving (I would probably just roast the sweet potatoes with olive oil, salt, and pepper if I was eating them with this dipping sauce.)

Whisk together sour cream and mayo, stirring until there are no lumps. Then add Sriracha sauce, starting with a small amount, stirring to combine, and tasting until it is as spicy as you'd like it. I used about 1/2 tsp. but if you like spicy foods you'll probably want a bit more.

When the sauce is as spicy as you'd like, add the fresh-squeezed lime juice and whisk in until the mixture is smooth. Serve dipping sauce with sweet potatoes fries.

What do the Phases mean?
The book explains it a lot better than I could...but the first 2 weeks you're on South Beach is Phase 1. During this phase you cut out all sugars, all breads, all potatoes, all rice, all pasta, all fruits, all alcoholic beverages, and even some vegetables. When you progress to Phase 2 you slowly add in things like brown rice, whole wheat pasta, a glass or 2 of wine, carrots, sweet potatoes, etc. You stay on Phase 2 until you reach your goal weight. Once you reach your goal weight you remain on Phase 3 for the rest of your life in order to maintain your weight. You are able to add in a few more foods and grains. As a matter of fact, lemme go ahead and post up the food lists for the phases.

the other thing is i am not a veggie person. i am reading that i need 4 cups a day. how are the "mock" items? do they taste like the veggies at all?

Are there ANY veggies that you eat??? If so, I'd just make sure to gorge on those as much as possible. It's really important you have your veggies b/c the protein from them will make you feel fuller longer. A lot of people swear by beans and your full serving of dairy on Phase 1 to help you get through w/ minimal problems.

As for the mock items, I do not like cauliflower AT ALL but the faux-tatoes were very good. :) I haven't tried any other mock items that I can think of, but I've heard the shrimp fried "rice" (made by shredding cauliflower) is very good.

i like some veggies, but you cant have corn or potatoes on phase 1 LOL. now i saw a recipe for "taters" made out of radish's that i am gonna try.

LOL...nope, none of those on Phase 1. Hell no taters EVER!!! Of course you could occasionally cheat, but a clean Phase 1 is really the best way to get off on a good foot.

It's true, though...and it's actually true that you really DO lose those cravings after you detox (Phase 1) from that stuff. I thought it was BS...but it's totally not.

i am gonna start next monday......give me a week to cram the stuff i love down my throat one more time :D
