What are some of your favorite end-of-the-pay-period-can't-really-afford-to-eat meals? I don't want to spend a lot on groceries this go round.

But I don't mean like Ramen... healthy(ish) stuff.

Foil packs. I take ground hamburger and make it into a patties. Then I cut up a potato and put it, the hamburger, a little slice of butter, and some canned corn into a piece of foil and fold it up. After awhile in the oven I have an amazing meal that cost vey little.

Edit: You can use any vegetable or seasonings you want. I just really like corn.

Of course I am also a huge fan of macaroni and cheese. I did not think this fit in your healty(ish) criteria though.

i usually make a pot of bean soup. lots of fiber and protein, veggies are cheap and you can get smoked hocks cheap to lend smokey flavor to the pot. one pot, about 10 bucks and for one person it will last a whole week if you eat it for lunch and dinner.

I've had this before, it's delicious. If you add carrots, celery and some other easy vegetables, you'll have yourself an even more healthy and yummy meal.

I'll have to try the burger and potato thing... sounds yummy!

And definitely the bean soup! I have an awesome chicken soup recipe, but it costs a LOT. It's worth it cause it lasts forever, and you can add more broth and thin it out and stretch it even further, but it's expensive for the whole.

We do navy or lima beans and rice. And I do a chicken stir-fry with pepper, onion, broccoli, and noodle (typically plain ramen ones but any will do).

I've yet to find a good red beans and rice recipe... :(

I can give you a really good one, but if we're just talking cheap-o food, the Zatarain's stuff in the box with a pound of smoked sausage added to it is pretty damn good and a real cheap meal - plus some leftovers.
